Charcuterie and cured meats

Salt and cured fat want freshness and lift rather than weight — and, in Spain, a fortified wine as saline as the ham.

Dry rosé

Classic

Pale to medium pink, dry, with red-fruit lift and white-wine freshness.

Salt and fat need freshness and light red fruit, not weight.

Serve 8–11 °C

Bone-dry fortified wines, often oxidative or flor-aged, with nutty saline depth.

Fino or Amontillado with jamón is a canonical Spanish pairing — salinity meeting salinity.

Serve 7–13 °C

White grapes fermented on their skins, giving tannin, texture, and amber colour.

Skin-contact tannin and savoury texture behave like a light red against cured fat, while the wine's freshness keeps it lifted.

Serve 12–15 °C
